Description

Delicious and healthy keto-friendly crepes filled with savory spinach and feta cheese, perfect for brunch or a light dinner.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 3 large eggs
  • 1 cup almond flour
  • 1 cup unsweetened almond milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil


Instructions

  1. In a bowl, whisk together the eggs, almond flour, almond milk, garlic powder, onion powder, salt, and pepper until smooth.
  2. Heat a non-stick skillet over medium heat and add olive oil.
  3. Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer.
  4. Cook for 2-3 minutes until the edges lift and the center is set.
  5. Flip the crepe and cook for an additional 1-2 minutes.
  6. Remove from heat and repeat with remaining batter.
  7. In a separate pan, sauté the chopped spinach until wilted, then mix with feta cheese.
  8. Fill each crepe with the spinach and feta mixture and fold.
  9. Serve warm and enjoy!
