Ingredients

- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 3 large eggs
- 1 cup almond flour
- 1 cup unsweetened almond milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
Instructions
- In a bowl, whisk together the eggs, almond flour, almond milk, garlic powder, onion powder, salt, and pepper until smooth.
- Heat a non-stick skillet over medium heat and add olive oil.
- Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer.
- Cook for 2-3 minutes until the edges lift and the center is set.
- Flip the crepe and cook for an additional 1-2 minutes.
- Remove from heat and repeat with remaining batter.
- In a separate pan, sauté the chopped spinach until wilted, then mix with feta cheese.
- Fill each crepe with the spinach and feta mixture and fold.
- Serve warm and enjoy!
