- 1 pound scallops
- 4 tablespoons unsalted butter
- 6 fresh sage leaves
- 1/2 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- Pat the scallops dry with a paper towel and season with salt and pepper.
- Melt 2 tablespoons of butter in a skillet over medium-high heat.
- Add scallops to the pan and sear until golden brown, about 2-3 minutes per side.
- Remove scallops from the pan and keep warm.
- In the same pan, add remaining butter and sage leaves, cooking until the butter is browned.
- Remove sage leaves, then stir in the heavy cream, cooking until slightly thickened.
- Serve scallops drizzled with the brown butter-sage foam.
