Description

A delicious Scandinavian Dill & Salmon Keto Quiche that is perfect for a low-carb diet.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked salmon, flaked
  • 1/2 cup cream cheese, softened
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan.
  2. In a medium bowl, combine almond flour, melted butter, salt, and black pepper. Mix until a dough forms.
  3. Press the dough evenly into the bottom and up the sides of the prepared pie dish. Bake for 10 minutes, then remove from the oven and let cool slightly.
  4. In a large bowl, beat together the eggs, heavy cream, cream cheese, dill, garlic powder, onion powder, salt, and pepper until smooth.
  5. Spread the flaked salmon evenly over the crust, then pour the egg mixture on top.
  6. Sprinkle shredded mozzarella cheese over the top of the quiche.
  7. Bake for 30-35 minutes, or until the quiche is set and the top is golden brown. Let it cool for 10 minutes before slicing.
  8. Serve warm or at room temperature.

Notes

  • For a creamier texture, add an extra 1/4 cup of heavy cream to the egg mixture.
  • For a different flavor, substitute the salmon with cooked shrimp or crab meat.
