- 1 lb chicken breasts, sliced into thin strips
- 3 bell peppers (red, yellow, and green), sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp oregano
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro, chopped, for garnish
- Optional toppings: low-carb tortillas, sour cream, guacamole, or salsa
Instructions
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the sliced chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle with chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and pepper. Toss everything together until well coated.
- Spread the chicken and vegetable mixture evenly on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through for even cooking.
- Remove from the oven and squeeze fresh lime juice over the top. Garnish with chopped cilantro before serving.
- Serve immediately with optional low-carb tortillas, sour cream, guacamole, or salsa if desired.
Notes
- For added flavor, marinate the chicken in the spices and lime juice for at least 30 minutes before cooking.
