Description

A delicious fusion of short ribs and truffle-infused cauliflower that creates a flavorful stack perfect for any occasion.


Ingredients

  • 2 pounds short ribs
  • 1 head cauliflower
  • 2 tablespoons truffle oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large oven-safe pot, heat oil over medium heat. Sear the short ribs on all sides and set aside.
  3. Add onion and garlic to the pot, sauté until softened.
  4. Return the short ribs to the pot, add the beef broth, salt, pepper, and thyme.
  5. Cover and cook in the oven for 3 hours until tender.
  6. Meanwhile, steam the cauliflower until soft, then blend with truffle oil until smooth.
  7. Once ribs are ready, stack short ribs over a scoop of truffle cauliflower puree.
  8. Garnish with fresh thyme before serving.
