- 1 head cauliflower
- 2 tablespoons truffle oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth

- 1 tablespoon fresh thyme
Instructions
- Preheat the oven to 300°F (150°C).
- In a large oven-safe pot, heat oil over medium heat. Sear the short ribs on all sides and set aside.
- Add onion and garlic to the pot, sauté until softened.
- Return the short ribs to the pot, add the beef broth, salt, pepper, and thyme.
- Cover and cook in the oven for 3 hours until tender.
- Meanwhile, steam the cauliflower until soft, then blend with truffle oil until smooth.
- Once ribs are ready, stack short ribs over a scoop of truffle cauliflower puree.
- Garnish with fresh thyme before serving.
