Description

A delicious Mediterranean-inspired dish featuring shrimp and olives, served with a zesty lemon cream.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup green olives, pitted and sliced
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 cup chicken broth
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zested and juiced
  • 1/2 cup heavy cream

Instructions

  1. In a spacious skillet, warm the olive oil over medium heat.
  2. Add the diced onion and sauté until it softens and becomes translucent, about 5 minutes.
  3. Incorporate the minced garlic and continue to cook for an additional minute, stirring frequently.
  4. Sprinkle in the cumin, smoked paprika, cinnamon, turmeric, and cayenne pepper (if desired). Mix thoroughly and let the spices cook for about a minute to release their aromas.
  5. Introduce the shrimp to the skillet, cooking for 2-3 minutes until they begin to turn a lovely pink hue.
  6. Fold in the sliced olives, drained tomatoes, and chicken broth. Season generously with salt and black pepper.
  7. Allow the mixture to come to a gentle simmer, cooking for an additional 5-7 minutes to ensure the shrimp are fully cooked and the flavors meld beautifully.
  8. Meanwhile, prepare the zesty cream by combining the heavy cream, lemon zest, and lemon juice in a small saucepan. Heat gently over low heat, stirring occasionally.
  9. Once the shrimp is perfectly cooked, take the skillet off the heat. Stir in the chopped parsley and generously drizzle the zesty cream over the dish before serving.

Notes

  • For an extra kick, feel free to add more cayenne pepper or some diced jalapeños.
  • You can also swap the shrimp for chicken or firm tofu for a delightful variation.
  • Pair with cauliflower rice for a satisfying meal.
