Instructions
- In a spacious skillet, warm the olive oil over medium heat.
- Add the diced onion and sauté until it softens and becomes translucent, about 5 minutes.
- Incorporate the minced garlic and continue to cook for an additional minute, stirring frequently.
- Sprinkle in the cumin, smoked paprika, cinnamon, turmeric, and cayenne pepper (if desired). Mix thoroughly and let the spices cook for about a minute to release their aromas.
- Introduce the shrimp to the skillet, cooking for 2-3 minutes until they begin to turn a lovely pink hue.
- Fold in the sliced olives, drained tomatoes, and chicken broth. Season generously with salt and black pepper.
- Allow the mixture to come to a gentle simmer, cooking for an additional 5-7 minutes to ensure the shrimp are fully cooked and the flavors meld beautifully.
- Meanwhile, prepare the zesty cream by combining the heavy cream, lemon zest, and lemon juice in a small saucepan. Heat gently over low heat, stirring occasionally.
- Once the shrimp is perfectly cooked, take the skillet off the heat. Stir in the chopped parsley and generously drizzle the zesty cream over the dish before serving.

- For an extra kick, feel free to add more cayenne pepper or some diced jalapeños.
