Instructions
- In a blender, combine eggs, cream cheese, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour a small amount of the batter into the skillet and swirl to coat the bottom.
- Cook for about 2-3 minutes until the edges lift, then flip and cook for another minute.
- Repeat with the remaining batter, adding butter to the skillet as needed.
