Description

A deliciously creamy vanilla custard that’s keto-friendly and sugar-free, perfect for a light dessert!


Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1/2 cup erythritol or sweetener of choice
  • 1/4 cup cornstarch
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter (optional)


Instructions

  1. In a medium saucepan, whisk together almond milk, erythritol, cornstarch, vanilla extract, and salt.
  2. Cook over medium heat, continuously stirring until the mixture thickens.
  3. Remove from heat and stir in butter if using.
  4. Pour custard into serving cups and refrigerate for at least 2 hours.
  5. Serve chilled.

Notes

  • For a thicker custard, increase cornstarch slightly.
  • Can be topped with keto-friendly whipped cream.
