Ingredients

- 2 cups unsweetened almond milk
- 1/2 cup erythritol or sweetener of choice
- 1/4 cup cornstarch
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter (optional)
Instructions
- In a medium saucepan, whisk together almond milk, erythritol, cornstarch, vanilla extract, and salt.
- Cook over medium heat, continuously stirring until the mixture thickens.
- Remove from heat and stir in butter if using.
- Pour custard into serving cups and refrigerate for at least 2 hours.
- Serve chilled.
Notes
- For a thicker custard, increase cornstarch slightly.
- Can be topped with keto-friendly whipped cream.
- Store leftovers in the fridge for up to 4 days.
