South African Boerewors with Chakalaka

Description

A classic South African sausage dish served with a spicy vegetable relish.


Ingredients

  • 1 kg ground beef
  • 400 g ground pork
  • 3 tablespoons coriander seeds
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2 cloves garlic, minced
  • 1/2 cup white vinegar
  • 1/2 cup cold water
  • 4 sheep casings
  • 2 cups chakalaka (spicy vegetable relish)


Instructions

  1. In a frying pan, dry roast the coriander seeds and black pepper until fragrant.
  2. In a large bowl, mix the ground beef and pork with the spices, garlic, vinegar, and water.
  3. Stuff the sausage mixture into the sheep casings.
  4. Twist sausages into desired lengths and tie off ends.
  5. Grill the boerewors until browned and cooked through.
  6. Serve with chakalaka on the side.

Notes

  • Boerewors is traditionally served with pap or bread.
  • Adjust the spice level of chakalaka to taste.
