- 1 large spaghetti squash
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the spaghetti squash in half and remove the seeds. Place the halves cut-side down on a baking sheet and bake for 30-40 minutes, until tender.
- While the squash is baking, heat olive oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until softened.
- Add ground turkey and cook until browned. Stir in bell peppers, Italian seasoning, salt, and pepper, cooking until the peppers are tender.
- Remove the cooked spaghetti squash from the oven and scrape out the strands with a fork.
- Add the spaghetti squash strands to the skillet with the turkey mixture, then pour in marinara sauce and mix well.
- Transfer the mixture to a baking dish, top with mozzarella and Parmesan cheese, and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.

- This dish can be made ahead of time and stored in the refrigerator.
