Description

A delicious and healthy casserole made with spaghetti squash, ground turkey, and vegetables, perfect for a comforting meal.


Ingredients

  • 1 large spaghetti squash
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half and remove the seeds. Place the halves cut-side down on a baking sheet and bake for 30-40 minutes, until tender.
  3. While the squash is baking, heat olive oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until softened.
  4. Add ground turkey and cook until browned. Stir in bell peppers, Italian seasoning, salt, and pepper, cooking until the peppers are tender.
  5. Remove the cooked spaghetti squash from the oven and scrape out the strands with a fork.
  6. Add the spaghetti squash strands to the skillet with the turkey mixture, then pour in marinara sauce and mix well.
  7. Transfer the mixture to a baking dish, top with mozzarella and Parmesan cheese, and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
