- 2 tablespoons olive oil
- 1 onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 zucchinis, diced
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell peppers, sautéing until they are soft.
- Add the garlic and cook for another minute.
- Stir in the zucchini, tomatoes, paprika, salt, and pepper.
- Reduce heat and simmer for about 15-20 minutes, until the vegetables are tender.
- Serve warm, optionally with a fried egg on top.
