Description

A traditional Spanish dish made with a variety of vegetables, often served as a tapa.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 zucchinis, diced
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell peppers, sautéing until they are soft.
  3. Add the garlic and cook for another minute.
  4. Stir in the zucchini, tomatoes, paprika, salt, and pepper.
  5. Reduce heat and simmer for about 15-20 minutes, until the vegetables are tender.
  6. Serve warm, optionally with a fried egg on top.
