Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.
- Add the chopped clams and their reserved liquid to the pot, stirring to combine.
- Pour in the vegetable broth and coconut milk. Bring the mixture to a gentle simmer.
- Stir in the soy sauce or tamari and lime juice. Season with salt and pepper to taste.
- Let the soup simmer for 10-15 minutes to allow the flavors to meld.
- Serve hot, garnished with sliced green onions and chopped cilantro.

- For added depth of flavor, consider adding a splash of fish sauce or a teaspoon of sesame oil.
