Description
These Spinach & Feta Stuffed Mushrooms are a delicious and healthy keto appetizer that is easy to make in an air fryer.
Ingredients

- 12 large cremini mushrooms
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.
- Add the chopped spinach and cook until wilted.
- In a bowl, combine the sautéed spinach, feta, black pepper, salt, and red pepper flakes.
- Remove the stems from the mushrooms and spoon the spinach mixture into each mushroom cap.
- Place the stuffed mushrooms in the air fryer basket and cook for 10-12 minutes until golden and tender.
- Serve warm and enjoy!
Notes
- These mushrooms can be made ahead of time and reheated in the air fryer.
- Experiment with different cheeses for variations.
