Description

These Spinach & Feta Stuffed Mushrooms are a delicious and healthy keto appetizer that is easy to make in an air fryer.


Ingredients

Scale
  • 12 large cremini mushrooms
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the chopped spinach and cook until wilted.
  4. In a bowl, combine the sautéed spinach, feta, black pepper, salt, and red pepper flakes.
  5. Remove the stems from the mushrooms and spoon the spinach mixture into each mushroom cap.
  6. Place the stuffed mushrooms in the air fryer basket and cook for 10-12 minutes until golden and tender.
  7. Serve warm and enjoy!

  • These mushrooms can be made ahead of time and reheated in the air fryer.
