- 1 cup fresh spinach, chopped
- 4 ounces goat cheese, crumbled
- 4 large eggs
- 1 cup milk
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 package (1.9 ounces) pre-made phyllo pastry cups (15 cups)
Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
- Add the chopped spinach and crumbled goat cheese to the egg mixture, stirring gently to combine.
- Place the phyllo pastry cups on a baking sheet.
- Carefully fill each cup with the spinach and goat cheese mixture, about 3/4 full.
- Sprinkle shredded mozzarella cheese on top of each filled cup.
- Bake in the preheated oven for 20-25 minutes, or until the quiches are set and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
