Ingredients

  • 1 cup fresh spinach, chopped
  • 4 ounces goat cheese, crumbled
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 package (1.9 ounces) pre-made phyllo pastry cups (15 cups)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  3. Add the chopped spinach and crumbled goat cheese to the egg mixture, stirring gently to combine.
  4. Place the phyllo pastry cups on a baking sheet.
  5. Carefully fill each cup with the spinach and goat cheese mixture, about 3/4 full.
  6. Sprinkle shredded mozzarella cheese on top of each filled cup.
  7. Bake in the preheated oven for 20-25 minutes, or until the quiches are set and the tops are golden brown.
