Delicious and spooky keto-friendly chocolate cookies decorated with a white chocolate spider web, perfect for Halloween.

- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated erythritol (or preferred keto sweetener)
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free chocolate chips
- 1/4 cup sugar-free white chocolate chips (for spider web decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt until well combined.
- In a large mixing bowl, cream together the softened butter and erythritol until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Fold in the sugar-free chocolate chips.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are set. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- While the cookies cool, melt the sugar-free white chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between until smooth.
- Transfer the melted white chocolate to a piping bag or a plastic bag with the corner snipped off. Drizzle the melted chocolate over the cooled cookies in a spider web pattern.
Notes
- For a more intense chocolate flavor, add 1 tablespoon of unsweetened cocoa powder to the dough.
- To make these cookies even spookier, add edible googly eyes on top of the cookies after drizzling the white chocolate.
