A delicious and unique dish that combines roasted tomatoes, spicy nduja, and fresh burrata with squid and anchovies.

- 2 cups cherry tomatoes
- 200 grams nduja
- 1 can anchovy fillets
- 250 grams burrata cheese
- 1 pound squid, cleaned and cut into rings
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cherry tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper, then roast for 20 minutes.
- In a skillet, cook the squid rings over medium-high heat until just opaque, about 3-4 minutes.
- Remove the roasted tomatoes from the oven and mix in the nduja and anchovies, letting them melt into the tomatoes.
- On a serving platter, smash the roasted tomato mixture, top with the squid and tear the burrata over the top.
- Garnish with fresh basil and serve warm.
