Description

A delicious and healthy recipe for stuffed zucchini boats filled with ground turkey, quinoa, and topped with mozzarella cheese.


Ingredients

  • 2 large zucchinis
  • 1 pound ground turkey or beef
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center with a spoon to create boats. Set aside the scooped-out flesh.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Add the ground turkey or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cooked quinoa, diced tomatoes, reserved zucchini flesh, oregano, basil, salt, and black pepper. Cook for an additional 3-4 minutes until heated through.
  6. Spoon the filling into the zucchini boats, packing it in gently. Place the stuffed zucchinis in a baking dish.
  7. Sprinkle the shredded mozzarella cheese evenly over the top of each stuffed zucchini.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.

  • For a vegetarian option, substitute the ground meat with black beans or lentils.
