Description
A delicious and healthy recipe for stuffed zucchini boats filled with ground turkey, quinoa, and topped with mozzarella cheese.

- 2 large zucchinis
- 1 pound ground turkey or beef
- 1 cup cooked quinoa
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the center with a spoon to create boats. Set aside the scooped-out flesh.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the cooked quinoa, diced tomatoes, reserved zucchini flesh, oregano, basil, salt, and black pepper. Cook for an additional 3-4 minutes until heated through.
- Spoon the filling into the zucchini boats, packing it in gently. Place the stuffed zucchinis in a baking dish.
- Sprinkle the shredded mozzarella cheese evenly over the top of each stuffed zucchini.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For a vegetarian option, substitute the ground meat with black beans or lentils.
- Add chopped bell peppers or spinach to the filling for extra veggies and flavor.
