Delicious sugar-free dark chocolate ganache truffles that are easy to make and perfect for satisfying your sweet tooth without the sugar.
Ingredients

- 1 cup sugar-free dark chocolate, chopped
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder, for rolling
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chopped chocolate. Allow to sit for a few minutes until melted.
- Stir in the vanilla extract until smooth.
- Refrigerate the mixture for about 2 hours, until firm.
- Using a small scoop, form the chocolate mixture into truffles.
- Roll each truffle in cocoa powder to coat.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- For a different flavor, add a pinch of sea salt or a drop of peppermint extract.
- Truffles can be frozen for up to 1 month.
