Instructions
- In a mixing bowl, combine almond flour, shredded coconut, lemon juice, lemon zest, protein powder, pitaya powder, and salt.
- If using, add honey and mix well until thoroughly combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Chill the balls in the refrigerator for at least 30 minutes.
