Ingredients

  • 1 head of green cabbage
  • 1 pound ground pork (or ground chicken)
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 2 tablespoons Szechuan chili paste
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon erythritol (or preferred keto sweetener)
  • 1 bell pepper, diced
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Carefully remove the outer leaves from the cabbage head, trying to keep them whole. Bring a large pot of water to a boil. Blanch the cabbage leaves in the boiling water for about 2 minutes until they are pliable. Remove and set aside to cool.
  2. In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and ginger, cooking for about 30 seconds until fragrant.
  3. Add the ground pork (or chicken) to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  4. Stir in the Szechuan chili paste, soy sauce, rice vinegar, erythritol, diced bell pepper, and shredded carrots. Cook for an additional 3-4 minutes until the vegetables are tender. Season with salt and pepper to taste.
  5. To assemble, take a cabbage leaf and spoon a generous amount of the meat mixture into the center. Fold the sides over and roll it up like a burrito. Repeat with the remaining leaves and filling.
  6. Serve the wraps warm, garnished with sliced green onions and fresh cilantro if desired.

Notes

  • For added crunch, include chopped water chestnuts in the filling.
  • Substitute the ground meat with tofu or tempeh for a vegetarian option. Adjust cooking times accordingly.
