- 1 head of green cabbage
- 1 pound ground pork (or ground chicken)
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 2 tablespoons Szechuan chili paste
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon erythritol (or preferred keto sweetener)
- 1 bell pepper, diced
- 1 cup shredded carrots
- 2 green onions, sliced
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Carefully remove the outer leaves from the cabbage head, trying to keep them whole. Bring a large pot of water to a boil. Blanch the cabbage leaves in the boiling water for about 2 minutes until they are pliable. Remove and set aside to cool.
- In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and ginger, cooking for about 30 seconds until fragrant.
- Add the ground pork (or chicken) to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the Szechuan chili paste, soy sauce, rice vinegar, erythritol, diced bell pepper, and shredded carrots. Cook for an additional 3-4 minutes until the vegetables are tender. Season with salt and pepper to taste.
- To assemble, take a cabbage leaf and spoon a generous amount of the meat mixture into the center. Fold the sides over and roll it up like a burrito. Repeat with the remaining leaves and filling.
- Serve the wraps warm, garnished with sliced green onions and fresh cilantro if desired.
Notes
- For added crunch, include chopped water chestnuts in the filling.
- Substitute the ground meat with tofu or tempeh for a vegetarian option. Adjust cooking times accordingly.
