Deliciously tangy and sweet keto-friendly lemon bars that are perfect for any occasion.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup erythritol
  • 1/2 cup butter, melted
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter until combined.
  3. Press the mixture into a greased baking dish to form the crust.
  4. Bake the crust for about 10-12 minutes, until lightly golden.
  5. In a separate bowl, whisk together the eggs, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon filling over the baked crust.
  7. Bake for an additional 20-25 minutes, until set.
  8. Let cool completely before slicing into bars.
