Description

A quick and flavorful Teriyaki Sheet Pan Salmon recipe that is perfect for a weeknight dinner.


Ingredients

  • 1 pound salmon fillets
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame seeds (optional)
  • Cooked rice or quinoa, for serving

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Place the salmon fillets in the center of the prepared baking sheet. Arrange the broccoli, bell peppers, and snap peas around the salmon.
  4. Drizzle half of the teriyaki sauce over the salmon and vegetables. Reserve the remaining sauce for later.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  6. Remove from the oven and drizzle the reserved teriyaki sauce over the salmon and vegetables. Sprinkle with sesame seeds if desired.
  7. Serve immediately over cooked rice or quinoa.

Notes

  • For a spicier kick, add a teaspoon of red pepper flakes to the sauce.
  • To make it a complete meal, add sliced carrots or zucchini to the sheet pan for extra veggies.
