Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.
- Stir in the black beans, corn, diced tomatoes with green chilies, and beef broth.
- Add the chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary. Serve hot, topped with shredded cheddar cheese, fresh cilantro, and lime wedges on the side.
