Description

A delicious recipe for Texas Roadhouse Smothered Chicken topped with Monterey Jack cheese, sautéed onions, and mushrooms.

Ingredients

Scale
  • 2 large chicken breasts
  • 1 tablespoon butter plus extra if needed
  • 1 tbsp minced garlic
  • 1 tbsp smoked paprika
  • 2 tbsp soy sauce
  • 1 medium onion cut into 1/4-inch slices
  • salt to taste
  • 1/2 teaspoon ground black pepper
  • 1 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 1/2 pound button mushrooms sliced
  • 2 slices Monterey Jack Cheese
  • 1 tbsp olive oil

Instructions

  1. Start by preparing your chicken breasts. If they’re particularly thick, you might want to pound them to an even thickness.
  2. In a bowl, combine the soy sauce, lemon juice, Worcestershire sauce, minced garlic, and smoked paprika. Place the chicken breasts in this marinade and let them sit for at least 30 minutes.
  3. Heat the olive oil in a skillet over medium heat. Add the sliced onions and sauté until they’re just beginning to soften, about 3-4 minutes. Add the sliced mushrooms and cook until both vegetables are tender.
  4. In the same skillet, add a bit of butter and let it melt over medium-high heat. Place the marinated chicken breasts onto the skillet and cook for about 5-7 minutes on each side or until fully cooked. Season with salt and pepper.
  5. Once your chicken is about done, place a slice of Monterey Jack cheese on each breast. Cover the skillet with a lid for about 1-2 minutes, allowing the cheese to melt.
  6. Top each cheesy chicken breast with the sautéed onions and mushrooms. Let everything meld together for another minute or two.

Notes

  • Marinate Longer: If you have the time, marinate the chicken for a few hours.
  • Use Fresh Ingredients: Fresh garlic and onions elevate the dish’s flavor profile.
  • Don’t Overcrowd the Pan: This ensures even cooking and better texture.
  • Rest the Chicken: Allow the cooked chicken to rest for a few minutes before serving.
  • Butter is Key: A dash of extra butter during cooking adds richness.
