- 2 cups almond flour
- 2 tablespoons coconut flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup erythritol or preferred sweetener
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter
- 1 tablespoon ground cinnamon
- 1 tablespoon vanilla extract
- 1/2 cup cream cheese
- 1/4 cup powdered erythritol for frosting
Instructions
- Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a bowl, mix almond flour, coconut flour, baking powder, salt, and erythritol.
- In a separate bowl, whisk eggs, almond milk, and melted butter.
- Combine the wet ingredients with the dry ingredients and mix until a dough forms.
- Roll the dough into a rectangle on a floured surface.
- Spread melted butter over the rolled dough and sprinkle cinnamon sugar mixture on top.
- Roll the dough tightly and slice into rolls.
- Place rolls on the prepared tray and bake for 15-20 minutes.
- For frosting, mix cream cheese and powdered erythritol until smooth.
- Drizzle frosting over warm cinnamon rolls before serving.

- These rolls can be made ahead of time and stored in the refrigerator.
