Description

Deliciously soft and gooey keto cinnamon rolls perfect for breakfast or dessert.


Ingredients

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or preferred sweetener
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1/2 cup cream cheese
  • 1/4 cup powdered erythritol for frosting


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, baking powder, salt, and erythritol.
  3. In a separate bowl, whisk eggs, almond milk, and melted butter.
  4. Combine the wet ingredients with the dry ingredients and mix until a dough forms.
  5. Roll the dough into a rectangle on a floured surface.
  6. Spread melted butter over the rolled dough and sprinkle cinnamon sugar mixture on top.
  7. Roll the dough tightly and slice into rolls.
  8. Place rolls on the prepared tray and bake for 15-20 minutes.
  9. For frosting, mix cream cheese and powdered erythritol until smooth.
  10. Drizzle frosting over warm cinnamon rolls before serving.
