- 1 pound ground beef (80/20 blend)
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (optional)
- 1 cup sugar-free marinara sauce (for serving)
Instructions
- Preheat your oven to 400°F.
- In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, egg, minced garlic, oregano, basil, onion powder, salt, and black pepper. Mix until just combined; be careful not to overmix.
- Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter.
- Place the meatballs on a baking sheet lined with parchment paper, ensuring they are spaced apart.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until they are browned and cooked through (internal temperature should reach 160°F).
- If desired, during the last 5 minutes of baking, spoon a little sugar-free marinara sauce over each meatball.
- Remove from the oven and let the meatballs rest for a few minutes before serving.
- Serve with additional marinara sauce on the side.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the meat mixture.
- Substitute ground turkey or chicken for a leaner option while keeping the almond flour and seasonings the same.
