  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional)
  • 1 cup sugar-free marinara sauce (for serving)


Instructions

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, egg, minced garlic, oregano, basil, onion powder, salt, and black pepper. Mix until just combined; be careful not to overmix.
  3. Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper, ensuring they are spaced apart.
  5. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are browned and cooked through (internal temperature should reach 160°F).
  6. If desired, during the last 5 minutes of baking, spoon a little sugar-free marinara sauce over each meatball.
  7. Remove from the oven and let the meatballs rest for a few minutes before serving.
  8. Serve with additional marinara sauce on the side.
