An easy and delicious recipe for lemon bars with a buttery crust and tangy lemon filling.

- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 4 large eggs
- 1 cup freshly squeezed lemon juice
- 1 teaspoon baking powder
- 1/4 teaspoon powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the salt and flour, mixing until just combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- Bake for 20 minutes or until lightly golden.
- In another bowl, whisk together the eggs, lemon juice, and baking powder.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 25 minutes.
- Allow to cool before dusting with powdered sugar and slicing.
Notes
- For extra flavor, add lemon zest to the filling.
- Store in the refrigerator for up to a week.
