- 3 tbsp white vinegar
- 1/2 cup water
- 3 tbsp low-carb sugar substitute (such as monk fruit or erythritol)
- 1 tsp pink Himalayan salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 whole cloves (optional)
Instructions
- In a medium saucepan, whisk together the tomato paste, white vinegar, water, low-carb sugar substitute, salt, black pepper, garlic powder, onion powder, and cloves (if using) until well combined.
- Cover the saucepan with a lid and place it over medium heat. Bring the mixture to a simmer.
- Once simmering, reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.
- After 20 minutes, turn off the heat and remove the cloves from the mixture.
- Allow the mixture to cool slightly, then pour it into a blender. Blend for about 30 seconds or until you achieve a silky, smooth texture.
- Transfer the blended ketchup into a jar or squeeze bottle and store it in the refrigerator.
Notes
- For a spicier ketchup, add a pinch of cayenne pepper or a few drops of hot sauce to the mixture before blending.
- If you prefer a sweeter ketchup, adjust the amount of low-carb sugar substitute to taste, keeping in mind that different sweeteners may have varying levels of sweetness.
