Description

This vibrant Tropical Turmeric Rice Salad combines fragrant rice with tropical fruits, spices, and refreshing herbs for a deliciously healthy dish.


Ingredients

  • 1 cup jasmine rice
  • 1/2 teaspoon turmeric powder
  • 1 3/4 cups water
  • 1/2 cup diced mango
  • 1/2 cup diced pineapple
  • 1/4 cup chopped cilantro
  • 1/4 cup green onion, sliced
  • 1/4 cup diced red bell pepper
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt


Instructions

  1. In a medium pot, combine jasmine rice, turmeric powder, and water. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
  3. Remove from heat and let sit for 5 minutes, then fluff the rice with a fork.
  4. In a large bowl, combine the cooked rice, mango, pineapple, cilantro, green onion, and red bell pepper.
  5. In a small bowl, whisk together lime juice, olive oil, and salt.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve warm or chilled.
