Ingredients

- 1 cup jasmine rice
- 1/2 teaspoon turmeric powder
- 1 3/4 cups water
- 1/2 cup diced mango
- 1/2 cup diced pineapple
- 1/4 cup chopped cilantro
- 1/4 cup green onion, sliced
- 1/4 cup diced red bell pepper
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- In a medium pot, combine jasmine rice, turmeric powder, and water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
- Remove from heat and let sit for 5 minutes, then fluff the rice with a fork.
- In a large bowl, combine the cooked rice, mango, pineapple, cilantro, green onion, and red bell pepper.
- In a small bowl, whisk together lime juice, olive oil, and salt.
- Pour the dressing over the salad and toss to combine.
- Serve warm or chilled.
