Description

A healthy twist on classic shepherd’s pie, using ground turkey and mashed cauliflower for a lighter filling.


Ingredients

Scale
  • 1 pound ground turkey
  • 1 head cauliflower, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon olive oil
  • 1/2 cup milk
  • 1/2 cup shredded cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add ground turkey, carrots, thyme, and rosemary. Cook until turkey is browned.
  4. Pour in chicken broth and allow to simmer for 10 minutes.
  5. While the turkey mixture cooks, steam the cauliflower until tender.
  6. Drain the cauliflower and mash it with milk, salt, and pepper to taste.
  7. In a baking dish, spread the turkey mixture and top with mashed cauliflower. Sprinkle cheese on top if desired.
  8. Bake for 25-30 minutes until the top is golden brown.

Notes

  • For a richer flavor, add Worcestershire sauce to the turkey mixture.
  • Can substitute ground turkey with ground beef or chicken.
