  • ¼ cup granulated erythritol

  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin powder (optional, for firmness)


Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine almond flour, granulated erythritol, and salt. Stir in the melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. Bake the crust for 10-12 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.
  4. In a large mixing bowl, beat the softened cream cheese with powdered erythritol and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  6. Stir in the pureed strawberries and lemon juice until well combined. If using gelatin, dissolve it in 2 tablespoons of warm water and add it to the mixture, stirring until fully incorporated.
  7. Pour the cheesecake filling over the cooled crust in the springform pan.
  8. Bake for 45-50 minutes or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  9. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.
  10. Before serving, top with fresh strawberry slices or a drizzle of strawberry puree for a ‘vampire bite’ effect.
