- 2 pounds beef shank, cut into chunks
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons ginger, minced
- 2 tablespoons tomato paste
- 3 cups beef broth
- 2 carrots, sliced
- 1 daikon radish, sliced
- 1 star anise
- 1 teaspoon cinnamon
- 2 tablespoons fish sauce
- 2 teaspoons sugar
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger; sauté until fragrant.
- Add the beef chunks and brown on all sides.
- Stir in the tomato paste and cook for a few minutes.
- Add the beef broth, carrots, daikon radish, star anise, and cinnamon.
- Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours until the beef is tender.
- Stir in the fish sauce, sugar, and salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- This dish is best served with bread or rice.
- Adjust the spices to your preference.
- For a thicker stew, let it simmer uncovered for a while.
