Description

A rich and hearty wild boar ragu that pairs perfectly with pasta.


Ingredients

  • 2 pounds wild boar, ground
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery, cooking until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the ground wild boar and cook until browned.
  5. Pour in the red wine and let it reduce for a few minutes.
  6. Add the crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper.
  7. Simmer the ragu for at least 1.5 hours, stirring occasionally.
  8. Stir in the fresh basil before serving.

Notes

  • Serve with pasta of your choice.
