Description
A rich and hearty wild boar ragu that pairs perfectly with pasta.
Ingredients

- 2 pounds wild boar, ground
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the ground wild boar and cook until browned.
- Pour in the red wine and let it reduce for a few minutes.
- Add the crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper.
- Simmer the ragu for at least 1.5 hours, stirring occasionally.
- Stir in the fresh basil before serving.
Notes
- Serve with pasta of your choice.
- This dish tastes even better the next day.
- You can substitute wild boar with beef if necessary.
