A delicious and easy recipe for Wild Garlic Fennel Flatbread that is perfect as a side dish or a base for sandwiches.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon fennel seeds
- 1 tablespoon olive oil
- 3/4 cup warm water
- 1/2 cup wild garlic leaves, finely chopped (or substitute with fresh garlic or chives)
- Extra olive oil for brushing
Instructions
- In a large mixing bowl, combine the flour, salt, baking powder, and fennel seeds. Mix well to distribute the ingredients evenly.
- Add the olive oil and warm water to the dry ingredients. Stir until a dough begins to form.
- Knead the dough on a lightly floured surface for about 5 minutes until it is smooth and elastic.
- Incorporate the chopped wild garlic leaves into the dough, kneading gently until they are evenly distributed.
- Cover the dough with a clean kitchen towel and let it rest for 30 minutes at room temperature.
- Preheat a skillet or griddle over medium heat.
- Divide the dough into 4 equal portions. Roll each portion into a flat circle about 1/4 inch thick.
- Place the flatbreads in the preheated skillet, cooking for about 2-3 minutes on each side until golden brown and cooked through. Brush with olive oil while cooking for added flavor.
- Remove from the skillet and keep warm while you cook the remaining flatbreads.
- Serve warm as a side dish or use as a base for sandwiches or wraps.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the dough.
- To make it herbaceous, mix in other fresh herbs like parsley or basil along with the wild garlic.
