A delicious and savory crustless galette made with wild mushrooms and Gruyère cheese.
Ingredients

- 2 cups wild mushrooms, chopped
- 1 cup Gruyère cheese, shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 3 eggs
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 teaspoon olive oil
- 1 cup all-purpose flour
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add the chopped mushrooms and cook until soft.
- In a large bowl, whisk together the eggs, cream, thyme, salt, pepper, and nutmeg.
- Stir in the sautéed mixture and cheese, then add the flour until just combined.
- Pour the mixture into a greased pie dish.
- Bake for 35-40 minutes or until golden brown and set in the middle.
- Let cool slightly before slicing and serving.
Notes
- For a richer flavor, try adding freshly grated Parmesan cheese.
- Double the recipe for a larger gathering.
