  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup chopped fresh parsley (optional)
  • Vegetable oil for frying

Instructions

  1. Place the grated zucchinis in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent soggy fritters.
  2. In a large bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, flour, eggs, salt, black pepper, garlic powder, onion powder, and parsley (if using). Mix until well combined.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  4. Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the skillet; cook in batches if necessary.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
