- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped fresh parsley (optional)
- Vegetable oil for frying
Instructions
- Place the grated zucchinis in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent soggy fritters.
- In a large bowl, combine the drained zucchini, mozzarella cheese, Parmesan cheese, flour, eggs, salt, black pepper, garlic powder, onion powder, and parsley (if using). Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook for 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the skillet; cook in batches if necessary.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or sour cream.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the mixture.
- Substitute zucchini with yellow squash or add finely chopped bell peppers for a different flavor profile.
