- 2 medium zucchinis, thinly sliced
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchinis to the skillet and cook for 5-7 minutes, stirring occasionally, until they are slightly softened. Remove from heat.
- In a mixing bowl, combine the heavy cream, dried thyme, salt, black pepper, and paprika. Whisk until well combined.
- In a greased 9×13 inch baking dish, layer half of the cooked zucchini slices. Pour half of the cream mixture over the zucchini, then sprinkle half of the mozzarella and half of the Parmesan cheese on top.
- Repeat the layering process with the remaining zucchini, cream mixture, mozzarella, and Parmesan.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
- Let it cool for 5 minutes before serving. Garnish with chopped parsley.
