Instructions

  1. Begin by spiralizing the zucchinis to create noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.
  2. Place the zucchini noodles in a large mixing bowl.
  3. Add the cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese (if using) to the bowl with the zucchini noodles.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
