- 2 medium zucchinis, spiralized into noodles

- 1/4 cup olive oil
- 2 tablespoons red wine vinegar

Instructions
- Begin by spiralizing the zucchinis to create noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.
- Place the zucchini noodles in a large mixing bowl.
- Add the cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese (if using) to the bowl with the zucchini noodles.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, garnished with fresh basil leaves if desired.
