Description

This Amazing Pull Apart Keto Monkey Bread is a delicious, low-carb twist on a classic favorite, perfect for a special breakfast or brunch.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol sweetener
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Divide the dough into small pieces and roll them into balls.
  6. Coat the dough balls in cinnamon and arrange them in a greased bundt pan.
  7. If using, sprinkle chopped nuts between the layers.
  8. Bake for 25-30 minutes, or until golden brown.
  9. Let cool for a few minutes before inverting onto a serving plate.
