- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol sweetener
- 1 tbsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Divide the dough into small pieces and roll them into balls.
- Coat the dough balls in cinnamon and arrange them in a greased bundt pan.
- If using, sprinkle chopped nuts between the layers.
- Bake for 25-30 minutes, or until golden brown.
- Let cool for a few minutes before inverting onto a serving plate.
