Ingredients

  • 1 head of cauliflower, riced (about 4 cups)
  • 8 ounces of cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil (for greasing the baking sheet)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly grease with olive oil.
  2. In a large mixing bowl, combine the riced cauliflower, chopped bacon, shredded cheddar cheese, eggs, green onions, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  3. Using a tablespoon, scoop the mixture and form small bite-sized balls. Place them on the prepared baking sheet, leaving space between each bite.
  4. Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and firm to the touch.
  5. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For added flavor, try mixing in some diced jalapeños or bell peppers.
