Bacon Cauliflower Hash Bites are a delicious and healthy snack made with riced cauliflower, crispy bacon, and cheese, perfect for any occasion.

- 1 head of cauliflower, riced (about 4 cups)
- 8 ounces of cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil (for greasing the baking sheet)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly grease with olive oil.
- In a large mixing bowl, combine the riced cauliflower, chopped bacon, shredded cheddar cheese, eggs, green onions, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
- Using a tablespoon, scoop the mixture and form small bite-sized balls. Place them on the prepared baking sheet, leaving space between each bite.
- Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and firm to the touch.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For added flavor, try mixing in some diced jalapeños or bell peppers.
- You can also substitute the cheddar cheese with mozzarella or pepper jack for a different taste.
