Description

This light and fluffy keto angel food cake is the perfect low-carb dessert for any occasion.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup erythritol
  • 12 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an angel food cake pan.
  2. In a bowl, mix almond flour, salt, and baking powder.
  3. In another bowl, whip the egg whites with cream of tartar until soft peaks form.
  4. Gradually add erythritol while continuing to whip until stiff peaks form.
  5. Gently fold in the almond flour mixture and vanilla extract until combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes or until golden and a toothpick comes out clean.
  8. Let it cool upside down before removing from the pan.
