- 8 ounces egg noodles
- 1 cup grated Pecorino Romano cheese
- 1 tablespoon freshly cracked black pepper
- 2 tablespoons unsalted butter
- Salt to taste
Instructions
- Cook the egg noodles according to package instructions until al dente.
- Reserve a cup of pasta water, then drain the noodles.
- In a large skillet, melt the butter over medium heat.
- Add the cooked noodles to the skillet and toss with the butter.
- Quickly add the Pecorino Romano cheese and black pepper, stirring until creamy.
- If needed, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt to taste and serve immediately.
