Description

Deliciously soft and spiced whoopie pies filled with rich cream cheese frosting, perfect for any occasion!


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup grated carrots
  • 1/2 cup chopped nuts (optional)
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt.
  3. In a large bowl, mix the brown sugar, granulated sugar, oil, and vanilla until well combined.
  4. Add the egg and mix until smooth.
  5. Gradually stir in the dry ingredients until just combined.
  6. Fold in the grated carrots and chopped nuts (if using).
  7. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set. Let cool completely.
  9. For the filling, beat the cream cheese and powdered sugar until smooth and creamy.
  10. Spread cream cheese filling on the flat side of one cookie, then top with another cookie to form a whoopie pie.

  • Ensure the carrots are finely grated for best texture.
  • These whoopie pies can be stored in the refrigerator for up to a week.
