- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup grated carrots
- 1/2 cup chopped nuts (optional)
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt.
- In a large bowl, mix the brown sugar, granulated sugar, oil, and vanilla until well combined.
- Add the egg and mix until smooth.
- Gradually stir in the dry ingredients until just combined.
- Fold in the grated carrots and chopped nuts (if using).
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set. Let cool completely.
- For the filling, beat the cream cheese and powdered sugar until smooth and creamy.
- Spread cream cheese filling on the flat side of one cookie, then top with another cookie to form a whoopie pie.
Notes
- Ensure the carrots are finely grated for best texture.
- These whoopie pies can be stored in the refrigerator for up to a week.
- Try adding raisins or pineapple for an extra twist!
