Description

This Cheesy Zucchini Pizza Casserole is a delicious, healthy twist on traditional pizza, packed with flavor and perfect for a weeknight dinner!


Ingredients

  • 3 cups shredded zucchini
  • 1 cup diced bell pepper
  • 1 cup sliced mushrooms
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup marinara sauce


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the shredded zucchini, diced bell pepper, and sliced mushrooms.
  3. Add Parmesan cheese, mozzarella cheese, garlic powder, Italian seasoning, eggs, salt, and pepper. Stir until well combined.
  4. Spread the mixture evenly in a greased 9×13 inch baking dish.
  5. Pour marinara sauce over the top.
  6. Bake for 30-35 minutes, or until the casserole is set and the top is golden.
