- 3 cups shredded zucchini
- 1 cup diced bell pepper
- 1 cup sliced mushrooms
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 3 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the shredded zucchini, diced bell pepper, and sliced mushrooms.
- Add Parmesan cheese, mozzarella cheese, garlic powder, Italian seasoning, eggs, salt, and pepper. Stir until well combined.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Pour marinara sauce over the top.
- Bake for 30-35 minutes, or until the casserole is set and the top is golden.
