- 1/2 cup grilled chicken, diced

- 1/4 cup sour cream
- 1/4 cup pico de gallo (fresh salsa)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste

Instructions
- In a skillet, heat olive oil over medium heat. Add the diced grilled chicken, chili powder, cumin, salt, and pepper. Sauté for about 5 minutes until heated through and well-coated with spices.
- Prepare the cauliflower rice according to package instructions or by grating fresh cauliflower into rice-sized pieces. Sauté in a separate pan for about 5 minutes until tender.
- In a bowl, layer the cauliflower rice as the base. Top with the seasoned chicken, shredded cheese, guacamole, sour cream, and pico de gallo.
- Garnish with fresh cilantro if desired. Serve immediately.
