Description

A delicious and healthy shrimp bowl featuring creamy avocado and zesty lime.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 1 jalapeño, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup cooked quinoa
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a bowl, mash the avocados and mix in lime juice, garlic, jalapeño, and cilantro.
  2. Season shrimp with salt and pepper, then heat olive oil in a pan over medium heat.
  3. Add shrimp to the pan and cook until pink and opaque, about 3-4 minutes per side.
  4. Remove shrimp from heat and let cool slightly.
  5. To serve, place cooked quinoa in bowls, top with shrimp, and add avocado mixture on top.

Notes

  • For added flavor, marinate the shrimp in lime juice for 30 minutes before cooking.
  • Garnish with additional cilantro and lime wedges if desired.
