  • 1 teaspoon smoked paprika

  • 1 cup grated Monterey Jack cheese
  • 1 cup chopped fresh tomatoes
  • 1/2 cup sliced fresh or pickled jalapeños
  • 1/4 cup diced scallions
  • 1 ripe avocado
  • 1 lime, squeezed for juice
  • 1/4 teaspoon chili powder
  • Salt, to taste
  • 1/4 cup Greek yogurt (optional)


Instructions

  1. Start by preheating your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine the chicken skin pieces with the olive oil, onion powder, smoked paprika, sea salt, and black pepper, ensuring each piece is well-coated.
  3. Arrange the seasoned chicken skin in a single layer on the prepared baking sheet and bake for about 20-25 minutes until they turn crispy and golden.
  4. While the chicken skin is baking, create the avocado dip. In a separate bowl, mash the avocado with a fork, then add lime juice, chili powder, and salt to your preference, mixing until you achieve a creamy consistency.
  5. Once the chicken skin is perfectly crispy, take it out of the oven and allow it to cool for a few minutes.
  6. On a large serving dish, create a base layer with the crispy chicken skin, then generously sprinkle the grated Monterey Jack cheese, followed by the chopped tomatoes, jalapeños, and diced scallions.
  7. Place the dish back in the oven for an additional 5-7 minutes, or until the cheese has melted beautifully.
  8. Serve the nacho delight warm, garnished with a generous scoop of the avocado dip and a spoonful of Greek yogurt if you like.
