- 1/4 cup Greek yogurt (optional)
Instructions
- Start by preheating your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
- In a mixing bowl, combine the chicken skin pieces with the olive oil, onion powder, smoked paprika, sea salt, and black pepper, ensuring each piece is well-coated.
- Arrange the seasoned chicken skin in a single layer on the prepared baking sheet and bake for about 20-25 minutes until they turn crispy and golden.
- While the chicken skin is baking, create the avocado dip. In a separate bowl, mash the avocado with a fork, then add lime juice, chili powder, and salt to your preference, mixing until you achieve a creamy consistency.
- Once the chicken skin is perfectly crispy, take it out of the oven and allow it to cool for a few minutes.
- On a large serving dish, create a base layer with the crispy chicken skin, then generously sprinkle the grated Monterey Jack cheese, followed by the chopped tomatoes, jalapeños, and diced scallions.
- Place the dish back in the oven for an additional 5-7 minutes, or until the cheese has melted beautifully.
