Description

A delicious and crunchy keto-friendly granola cereal that is perfect for breakfast or a snack.


Ingredients

  • 2 cups mixed nuts (almonds, pecans, walnuts)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup erythritol (or sweetener of choice)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine all dry ingredients.
  3. In a separate bowl, mix melted coconut oil, erythritol, vanilla extract, and cinnamon.
  4. Pour the wet mixture over the dry ingredients and mix well.
  5. Spread the mixture evenly onto a baking sheet.
  6. Bake for 15-20 minutes, stirring halfway through until golden brown.
  7. Let cool completely before serving.
