A delicious low-carb take on a classic taco pie, perfect for those watching their carb intake.


Ingredients

  • 1 pound ground beef
  • 1 cup diced onions
  • 1 packet taco seasoning
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup bell peppers, diced


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onions until the beef is browned.
  3. Stir in the taco seasoning and cook according to package instructions.
  4. In a bowl, whisk together the eggs and heavy cream.
  5. Add the cooked beef mixture to the egg mixture.
  6. Stir in the cheese, tomatoes, and bell peppers.
  7. Pour the mixture into a greased pie dish.
  8. Bake for 30-35 minutes or until set and lightly browned on top.
  9. Let it cool for a few minutes before slicing.
