- 1 1/2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup butter, softened
- 1/4 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- 4 ounces unsweetened chocolate, melted
- 4 large eggs
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour and cocoa powder.
- In another bowl, cream butter and erythritol until fluffy.
- Add vanilla and melted chocolate, mix well.
- Incorporate dry ingredients and salt.
- Spread mixture into a pie pan and bake for 12-15 minutes.
- Let cool completely.
- Beat eggs in a bowl until light, then add to cooled chocolate mixture.
- Transfer filling into the crust and chill until set, about 2 hours.
Notes
- For extra flavor, add a splash of coffee to the chocolate filling.
- Store leftovers in the refrigerator for up to a week.
